Hey, I was interested to know what different instruments you think the air nomads used and what their music would sound like.
Given that soundbending exists and that air it's their whole thing, I always thought they would have many different wind instruments (flutes,wind chimes,...) and that they voices/music would echo A LOT in the mountains (something like the voice Elsa hears in Frozen 2)
Air Nomad music culture would likely be inspired by Tibetan singing styles and instruments. I'll split this post series into two parts: Singing & Instruments.
Building Up: Air Nomad Vocal Styles
Overtone Chanting
Overtone chanting is a vocal technique in which the chanter produces two distinct pitches at the same time, creating a resonant and trance-like effect. There are three styles/ranges of Tibetan Buddhist overtone chants: Gyuke (རྒྱུད་སྐད་) is lowest while Dzoke (མཛོ་སྐད་) and Gyer (གྱེར་) are more varied in sound. The three are used in a variety of Tibetan Buddhist ceremonies. These styles of chanting are also one of the musical influences behind the famous "lion-turtle chant".
Lu Singing
In contrast to the heavy bass profundo tones of Tibetan Buddhist chanting, Lu (གླུ) is a nomadic folk style of singing characterized by a cappella performances, high-pitched vocals, and intense glottal vibrations. It is often used to express an appreciation for different aspects of nature and to recount stories of folk heroes. I could see Aang being a huge fan of this style of singing.
Just as you suspected, the singing style of high-altitude people groups tends to have quite a strong "echo"- component to it. I think it sounds very ethereal.
