Ingredients: 1 cup cooked black beans. 1 cup cooked corn kernels. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped cilantro. 8 small corn tortillas. 1 avocado, sliced. 1 lime, cut into wedges. Salt and pepper to taste. For the Cilantro Lime Sauce:. 1/2 cup vegan mayonnaise. 1/4 cup chopped cilantro. 2 tablespoons lime juice. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: In a small bowl, mix together all ingredients for the Cilantro Lime Sauce. Set aside. In a large mixing bowl, combine black beans, corn, tomatoes, red onion, and chopped cilantro. Season with salt and pepper to taste. Warm corn tortillas in a dry skillet over medium heat for about 30 seconds on each side. To assemble tacos, spoon bean and vegetable mixture onto each tortilla.
