It's because many people were raised on that part of history where "white" were colonizers, completely ignoring Eastern Europe. Thus, people can't believe that Latvians, e.g., used to be in literall slavery for nearly 500 years, that Belarus used to be Jewish Balto-Slavic state until nazis and communists killed 90% of population, and Ukraine... God, we didn't have peaceful times which lasted more than 50 years, since Grand Duchy of Lithuania collapsed. Yes, it just happened that Eastern Europeans mostly have white skin, however, thanks to our rich history of EVERYONE trying to kill us, the term "white" means "the innocent, the oppressed" here. In Eastern European fairytales and just everyday-life metaphors, evil people, occupiers, opressors, and destroyers are described as mostly "dark," although it doesn't necessarily mean the skin colour.
