Creamy Avocado Pasta by @esma_monem š
Recipe: 12 oz Spagetti 2 ripe avocados, halved, seeded and peeled ½ cup fresh basil leaves 2 cloves garlic 2 tablespoons freshly squeezed lemon juice Kosher salt and freshly ground black pepper 1/3 cup olive oil 1 cup cherry tomatoes, halved ½ cup canned corn kernels, drained and rinsed DIRECTIONS: ⢠In a large pot of boiling salted water, cook pasta according to package instructions; drain well ⢠To make the avocado sauce, combine avocados, basil, garlic and lemon juice in the bowl of a food processor; season with salt and pepper, to taste ⢠Add olive oil in a slow stream until emulsified; set aside. In a large bowl, combine pasta, avocado sauce, and cherry tomatoes. Enjoy! #letscookvegan

Raw vegan tacos by The First MessĀ
Loads of rice and roasted brussels sprouts for dinner! š±šš The shredded brussels are from Trader Joeās. I seasoned them with chili powder, cumin and black pepper and roasted them on parchment for 15 minutes at 400F. No oil or salt needed! And I LOVE this peanut coconut sauce from Whole Foods. I poured every last drop on this plate and licked the bottle clean. No shame!! I baked some banana strawberry and coconut muffins and oh my! I swear you canāt even tell they are 100% healthy and vegan.
In my opinion, adding mashed banana into any baked goods is pretty much a guarantee that it will taste amazing!
So these babies are vegan, refined sugar free, low fat and can easily be made gluten free. They are also soft, fluffy, moist and SO delicious. Once again, I regret only making six!
Anyone wanting to convince their family that vegans donāt have to miss out, make these now!!
BANANA STRAWBERRY & COCONUT MUFFINS
Makes 6
- 1 cup flour of your choice (I used a mix of wholemeal, plain and sorghum flours) - 1 tsp baking soda - 1 tsp cinnamon - 2 heaped Tbsp Norbu natural sweetener (or alternative eg. coconut sugar) - 1 ripe banana - ½ Tbsp chia seeds soaked in 6 Tbsp water to make a chia āeggā - 1 tsp natural vanilla extract - ½ cup coconut rice milk - punnet of strawberries, chopped - desicated coconut, to sprinkle
1. Preheat oven to 180 degrees celcius
2. Combine flour, baking soda, cinnamon and sweetener.
3. In a separate bowl combine mashed banana, chia egg, vanilla and coconut rice milk and mix well
4. Stir together wet and dry ingredients and fold in strawberries mixing until everything is well combined
5. Spoon into a non-stick or lined muffin tray and sprinkle with coconut.
6. Bake for 20-30 minutes or until golden
