Sweet and sour squash on crostini topped vinegar pearls -(Gringaspearls)

14oz. Butternut squash sliced thin 1½ Red Thai paste 3 oz. Red onion sliced 1 Tbsp. Sriracha sauce ¾ oz. Demerara sugar 1 Multigrain Baguette sliced rounds toasted 2 pkt Gringas pearls Cilantro

Method

1. Preheat oven to 450f 2. Mix squash, onion, Sriracha and Thai paste. Place a foiled baking tray 3. Sprinkle with sugar and cook for 20min. Cool until warm 4. Spoon on the baguette rounds 5.Top with the Gringas pearls and Cilantro 24 Count

Meatballs with Sarta (picante)

10 oz. Ground beef (85vl) 3 oz. Sarta picante ¼ sliced 5 oz. Onions fine dice 1 oz. Corn chips ground 3 oz. Sweet corn kernels cooked ½ oz. thyme fresh Salt Cracked pepper Method

1. Sauté onions until soft and add Chorizo for 2mins

2. Mix all ingredients by hand and form 1 ½ oz. balls. Brown and finish in oven for 15min
