ingredients:

Greek yogurt/ skyr (120g / 1/2 cup)

Egg whites (30g / 1 small)

Unsweetened almond milk (or any milk) (30ml / 2 tbsp) Flour (60g / 1/2 cup)

Blueberries (about 80g)

Sweeener (to taste)

method:

preheat oven to 180C

mix all liquid ingredients

Add the dry ingredients

Fold in blueberries

Put the mixture in a prepared baking shape and bake for 30-35min

Let it the cake cool for a while, so it hardens a bit
