Recipe idea: Thai Coconut, Cauliflower and Sweet Potato Soup
Because eating fresh, in season local produce can be delicious!
Okay so the tinned coconut and thai spices weren’t local or in season here but this was a great way to liven up cauliflower and sweet potato.
Recipe consisted of adding all the following into a pan, cooking for 20 mins and then whizzing up in a food processor: 2 sweet potatoes, 1/2 cauliflower, tin of coconut milk, 2 tbsp red thai paste, 1l stock, 1 tbsp peanut butter
Tastes fantastic and will be a great lunch for the rest of the week. Winning!

Read this article with interest to see what Anne had learnt from her experiences. Seems like she too couldn't find any toilet roll without plastic packaging...but until we find a better alternative I'll accept there may be some items where plastic packaging is the best option we have. I don't fancy the risk of damp or already-soiled loo roll!

Considerations: Managed to get a huge (~4kg) box of tomatoes for £3 from my local market. Saved on packaging and on price, but not on time and energy costs... After making vats of tomato sauce and soup to feed me this week, I made this delicious chutney with the leftovers. Would make a great gift!

Recipe idea: leek and potato soup

Recipe consisted of:
...frying up some chopped onion, garlic & leek
...adding potatoes and stock along with some carrots, celery & herbs (sage, thyme, rosemary, pepper…) to taste
...simmering for a while
Considerations: Ended up making quite a bit of soup. Was very filling and lasted most of the week. Great value for money.
Never tried adding celery to leek soup before but it would do so again - complimented the flavours well.
As much as 50% of all food produced in the world ends up as waste every year according to figures from the Institution of Mechanical Engineers. But how much water is needed to produce it?
The answer is staggering: 15,415 litres of water for 1kg of beef compared to 287 litres for 1kg of potatoes. Saddened to see chocolate at the top of the list, but hoping to make up for wasting water on my addiction to the stuff with my veggie lifestyle!
The future of energy: could we take the potato-powered alarm clock concept to the paddy-fields? Does not look likely to deliver the kind of energy we consume but it's still a fantastically interesting concept to be developing!
Top Tip: "Be prepared"
Trying to waste less while out-and-about reminds me of hiking trips and survival challenges: be prepared for anything! I'm now carrying a thermos mug and carrier bag around with me every day. Doing the girl guides proud!

Availability of local, in season, produce: 🌍🌍🌍🌑🌑

Rationale: Impressed with the selection of fresh fruit and vegetables here without packaging. I could even buy fresh herbs separately! And although I could only buy bagged potatoes, the bag was recyclable. However, the cashier insisted on weighing the cherry tomatoes on a plastic sheet so I don't think I can give them full marks on the packaging front. I'm also not sure how I feel about the fruit and veg misting machines... I imagine they make the fresh stuff look more appetising and are a good marketing ploy but I don't think they are wholly necessary—a waste in themselves perhaps. In terms of the labelling of produce, this was not particularly well done in this particular store—a number were missing or in the wrong place so it was hard to tell where some items were from.
Price-wise, as you'd expect from a supermarket. Got a full bag of fresh goodness that should last me the week for under £10. Who said eating well was expensive!
Recipe idea: rhubarb crumble

Recipe consisted of:
...boiling up 1 bunch of rhubarb with some sugar. Added a smidgen of vanilla and ginger to give it an extra bit of flavour.
...making a crumble (rubbing together flour, butter/marg, sugar). I added some almonds and desiccated coconut just because I had them in the cupboard and just because. Yum.
...combining and heating in the oven until the top went toasty.
Considerations: Not entirely convinced by the energy efficiency of this recipe really given the cooking required, although I did use an already hot oven.
