anyone want my mom's insanely good choc chip muffin recipe from when she owned a bakery? it's probably based on a king arthur flour recipe so it might be available on the internet but im not gonna gatekeep
sorry that took forever, i had to convert all the kitchen jargon into useful measurements. If you have a kitchen scale, use it. Measuring by weight will make this way faster!
320g (2 1/3c) all purpose flour (if you have soft wheat flour lying around, use 120g/1c of it and the rest all-purpose)
200g (1c) sugar
1/2 tsp salt
1/2 tsp baking soda
2 1/2 tsp baking powder
1c buttermilk/sour milk
175g (about half a bag) mini chocolate chips
65g (a 1/4c plus a lil) sour cream
2 eggs
12g (about 2 1/2 tsp) vanilla
42g (2T) honey
30g (2T) vegetable oil
110g (1 stick) butter, melted (if you use salted butter, reduce salt to 1/4 tsp)
1. Mix together dry ingredients in a big bowl. Add chocolate chips.
2. In separate bowl, whisk together eggs and (room temp) melted butter. Once it's smooth, add oil, honey, buttermilk, vanilla, and sour cream.
3. Combine the wet and dry ingredients. Let rest for an hour. (This gives the baking powder time to really go crazy and give you the Big Muffin Lift.)
4. Preheat oven to 425° F. Line muffin tin and scoop about 1/3 batter into each cup. Garnish as desired with extra chocolate chips and sugar (Demerara sugar is good for this but normal will do).
5. Bake 8 minutes. Then, without opening the oven, reduce heat to 350°F. Bake 8-10 minutes more.
6. Cool 10 minutes in pan before removing.
