PRESERVED LEMONS
This is a great budget gift idea to give to loved ones.
INGREDIENTS: A sterilised glass jar (I used a 1L jar) 1 C salt 10 lemons 2 C of fresh lemon juice Stick of rosemary/whole peppercorns/chilli (depending on flavours or decorations you wish to add)
METHOD: Cut lemons into quarters but do not cut all of the way through. Stuff with as much salt as possible. Tightly stuff lemons into jar as well as any flavourings (I used rosemary and peppercorns). Fill the glass jar all the way to the top with lemon juice and tightly seal. Allow to preserve for 3-4 weeks in a cool dry place - your refrigerator if you have room!
NOTE: Use preserved lemon in moroccan dishes or baked/steamed fish.
