Ginger Ale v1.0
With more and more ginger ale being made, I have refined the recipe a little along the way.. The ingredients remain more or less the same..
Ingredients
1.5l water.
3/4 cup Sugar (1/4 cup normal white sugar + 1/2 cup gula merah)
2 Tbsp grated Ginger
Juice of 1/2 Lemon
1/4 Tsp bakers yeast OR 1 teaspoon of water Kefir.
Small stick of Cinnamon for extra flavour (optional).
Gula Merah is a local brown sugar we get in South East Asia. You can just use white sugar all the way.
Recipe
Boil the 1.5l water (this step also helps to emit any fluorine in the water)
Add the grated Ginger, Sugar and Cinnamon to the water and boil the mixture for another minute. The Sugar should have all dissolved by now.
Let the mixture sit and cool down to ~50deg or till it's warm to touch.
Filter out the Ginger and Cinnamon using a sieve and pour the rest of the ale in a fermentation jar.
Add the yeast or kefir to the jar and let it sit for a couple of days.
Check every day to see how much sugar has been consumed by the yeast/kefir, supplement with more sugar if the ginger ale tastes too sour.
After a couple of days, move the ale to a airtight bottle and refrigerate it. It's ready to drink once it's cold.
I am using the Burken IKEA jar as fermentation jars as they let out any build up of carbon dioxide safely. No fear of Kaboom. Also I can leave the ale fermenting for a few days without worrying too much.
