I think you'll find pasta dishes are very versatile ☝️😏 given I'm a d-lister and not a dietitian so I cannot attest to the sustainability andor nutritional value of this but what I eat when I have nearly nothing is just plain pasta with butter (olive oil if I'm out of butter), garlic and shaky parm 🧀🧀🧀🧀 #nomouses
With the price of meat how it is, it's usually off the table as an option (unless you buy shitty cuts for stew or saltpork is usually cheap but which you will need to blanch before preparing if you don't want to suffer tremendously) so what you're gonna need is an alternate protein source such as beans or tofu. Firm tofu after being pressed can be cut into pieces and fried in leftover bacon fat (I keep it in a tub in the fridge for this) then added to a stir fry (bagged frozen vegetable mix, soy sauce, worcestershire, mirin*, sesame oil*, roasted sesame seeds) and served over a cup or two of minute rice at your discretion.
*substitute or cut these as needed because many lack a proclivity for keeping every condiment ever in their pantry as I've been told
