Happy Canadian Thanksgiving! Tofurky slices, homemade vegan mushroom gravy, mashed potatoes, baked sweet potato, vegan creamed spinach & kale (with Porcini, Chanterelle, Shiitake, Portabella & Oyster mushrooms), and a dollop of cranberry sauce

Multigrain pizza with a sweet caramelized onion sauce, topped with roasted red peppers, Cremini mushrooms & artichoke hearts... Oh yes...

Spicy Sichuan noodles with fiddleheads... It's fiddlehead season! ^-^

Improvised noodle soup... Broth inspired by Dan Dan noodles (but based on what was in my cupboard & fridge!). Peanut butter, sesame oil, chili oil, soy sauce, garlic, Sichuan pepper, sea salt, turbinado sugar & balsamic vinegar mixed with vegetable stock. Soba noodles, broccoli, chives and sesame seeds on top. I had my doubts the substitutions would hold up, but it tasted delicious!

Made some creamy vegan polenta tonight with thyme & basil...

Mini vegan cupcakes with dark chocolate fudge icing... I used a variation of this vegan cake recipe and winged the icing by using vegan dark hot chocolate mix, coconut milk and vegan margarine. #yummy

I made a farinata for dinner (chickpea flour, olive oil, onions, thyme and black pepper)...

Vegan pizza party tonight! Tomato paste, basil, veggie pepperoni, onions, broccoli and Daiya Swiss cheese drizzled with olive oil... And a Belgian beer to wash it down with :) I have been dreaming of this all day...

PB & J style oatmeal this morning... Oatmeal topped with natural crunchy peanut butter, blueberry applesauce, agave nectar, dates & chia seeds

Creamy quinoa curry tonight ~ quinoa, onions, red bell pepper, broccoli, carrots, mushrooms & okra cooked in a creamy curry sauce made from tomato paste, masala seasoning and coconut yogourt...

Weathering the storm (and a cold) with a hot, comforting bowl of corn chowder...

I made some cheddar biscuits this morning...
