Keto-Friendly Protein Muffins!
Lemon-Rosemary Cream Cheese and Key Lime Low Carb Muffins
I have been struggling to come up with something easy and filling to take for breakfast on the go, and so far this is my favorite option. These are SO easy! I put together a simple muffin recipe and then flavor them however I want. Batter Recipe: 2 cups of my "keto flour" (see below) 2 scoops whey protein 2 eggs 1 tsp baking soda 1 stick melted butter (sometimes I sub half of this with coconut oil) 1/2 block softened cream cheese 1/3 cup water Stevia to taste Just combine this all in a bowl. No fancy tricks here. Put cupcake liners in a pan and fill them after you've customized the flavors. Bake at 350 for 15-20 minutes. *About my keto flour: I've been experimenting a lot with alternative flour for low-carb cooking. I've noticed that between almond flour and coconut flour, neither really yielded perfect results. One was too coarse, the other too fine. One too oily, the other too dry. So I thought, why not make a blend? I used 2 parts almonds to one part coconut flakes and ran them through the food processor and it was much better than either alone. I got a GREAT deal on coconut in the Whole Foods bulk section, around $4/lb. Now for the flavor-specifics! Lemon-Rosemary With Cream Cheese Filling: Squeeze 1 lemon and shave zest into the batter. Add a few pinches of rosemary. For the filling, use the other 1/2 of the cream cheese from earlier and blend with the juice of another lemon, zest, and stevia to taste. Drop a dollop of this into each uncooked muffin and top with a pinch of rosemary. Done. Key Lime: Juice of 2 limes and their zest into the batter. Done. I mean honestly they are so good and so easy. This is probably my favorite low-carb creation so far. I've made a chocolate hazelnut variety. Tried out zucchini once too. There are endless possibilities.
