Ingredients: • 1 tsp salt • 1 tsp baking powder • 300 g all purpose flour • 200 g or 333 ml hot water • 50 g or 83 ml vegetable oil Directions: Add the all purpose flour, baking powder, and salt into a large bowl and mix them together. Make a well in the middle of the bowl. In another bowl, add the vegetable oil into the hot water. Pour this mixture slowly into the well while gradually incorporating the flour. Be extra careful when kneading the water and flour together with your hands because it will be very hot. Knead until the "tortilla" dough becomes elastic and does not feel sticky. Put the dough in a well-oiled bowl, then cover it shut with a cloth or plastic wrap before letting it rest in a warm corner for thirty minutes. Ideally, the longer the dough rests, the better, as it gives time for the flour to gather all the moisture. But if there's not enough time, this step can be skipped. After resting, take out the dough and knead it into a long oval shape. The dough can be divided into eight or sixteen pieces depending on the preferred size and portion though I find sixteen to be reasonable. Roll the "tortilla" dough pieces into a bowl, then flatten them with a rolling pin until thin. The "tortilla" can be cooked on a pan or a griller.
Dry Mixture Ingredients: • 93 g all purpose flour • 1 tsp baking powder • 1 tsp vanilla powder • 1 tsp of salt Wet Mixture Ingredients: • 56 g vegetable oil • 120 g granulated sugar • 1 big chicken egg • 200 ml coconut milk *shake the coconut milk first so it doesn't clump Directions: First things first, preheat your oven for about 10 minutes at 180 degree celcius. Sift the flour, baking soda, vanilla powder, and salt into a bowl and mix them well. This will be the dry mixture. In another bowl, mix sugar and vegetable oil together. Then add the egg. Beat them as hard as you can with your trusty fork (use a mixer if you have weak arms). It doesn't need to be perfectly pale and fluffy, just until the mixture feels lighter or more airy and slightly paler than before. This is the wet mixture. Gradually incorporate the dry mixture into the wet mixture along with half of the coconut milk. Stir them well (by well I mean use your maximum strength) until there are no clumps, then pour in the rest of the coconut milk. Mix again so everything is perfectly combined. Grab a tall baking dish (19.5cm long, 7.5cm wide, and 6cm deep), and fill it with the cake batter. It should be halfway full, to give room for the cake to rise so it doesn't overflow. Bake the cake in the oven at 200 degrees celcius with both top and bottom heat. Every oven is different, so don't rely too much on time. Just check up on it regularly, and if you want to make sure, poke your cake with a toothpick or fork. • Sticky, wet batter dripping on the toothpick/fork means the cake is underbaked and still needs some time in the oven. • If there're still some clumps of cake on the toothpick/fork, it means the cake's ready. It will turn out moist and soft. • Toothpick/fork come out clean, then the cake is overbaked. It will be dry and crumbly.
