Canadian Fat Cakes - From iCarly
Everyone who has ever watched iCarly always wanted to eat Canadian Fat Cakes, a sweet that appeared on season 4 episode 24. In the episode, Carly, Sam and Freddy win an award and get to visit Fat Cake Headquarters, in Canada. During the entire episode, Sam rants about how the Canadian version of the sweet is better, because it contains "Cane Fat" instead of "Corn Fat". But today, we are making fat cakes using "Milk Fat", or just "butter".
24 muffin/cupcake baking tins
1 cup of heavy whipping cream
Preheat the oven to 350°F and greese the baking tins.
In a large bowl, beat the sugar and the butter until light and fluffy.
Add in the eggs one at a time, beating well, and add the vanilla.
In another bowl, sift in the flour, baking soda, the salt and the cocoa. Add half of this mixture to the butter and sugar and beat well.
Add in the milk and the other half of the mixture. Beat well.
Add in the cold whipping cream, the sugar and the food coloring and beat on medium-high speed on an electric mixer for 2-3 minutes. Be careful not to overmix, as that causes the cream to split.
Reserve the whipped cream for the next step.
Put the cakes upside down and, using a small knife, cut the bottom of each cake and cut out it's inside, that's where we'll put the filling later. Make sure to save the bottoms but can eat the part you cut out if you want ;).
Fill the cakes in with the frosting using a piping bag and put the bottoms in again. Cover each cake with the frosting.
Sprinkle in the coconut, and make sure every part of the cake is covered.
