why even go for salary arbitration in the first place if it can mess things up or isn't likely to happen at all? what's the point?
A couple reasons. It puts a deadline on things. Once a player or team elects arbitration, it generates a date where the situation will be resolved for at least the upcoming season, one way or another. And it's another negotiating tool. It's leverage, a threat, something to get the other side to adjust their offer. If a player is asking for $7 million and the team is offering $4 million, there's a chance the arbitrator awards a $7 million contract. In a league with a salary cap, every little bit of cap space can help, so it motivates the team to up their offer just to potentially avoid paying even more if the hearing actually happens. It also guarantees term. Every contract awarded in arbitration is either one or two years. It can't be more than that, so it's motivation to get something done prior to the hearing if you want a longer contract. Or to avoid walking a player directly to unrestricted free agency. If an RFA is one year away from UFA status, and they elect arbitration and it actually gets to the hearing, you've just guaranteed them the chance to go to free agency and leave next summer without you having further say in it. Teams generally don't want to do that. Good motivation to soften their position in negotiations.
After rfas choose to go to arbitration are they locked into a hearing or can they still talk to their team and sign a contract without going that far??
They can still re-sign right up until just before the hearing starts. Most of the time, that's what ends up happening. Arbitration can be awkward and you really risk hurt feelings and resentment if it actually gets to the hearing, so teams and players are generally both pretty motivated to just not go through that if they can work things out on their own.

Chinakhov’s contract runs through the 2028-29 season and carries an average annual value of $6.25 million. Silovs’ deal runs through the 2026-27 season and carries an average annual value of $2.8 million. Gustafsson’s one-year contract runs through the 2026-27 season and carries an average annual value of $850,000 at the NHL level. Blomqvist’s two-year deal runs through the 2027-28 season and carries an average annual value of $875,000 at the NHL level."

With offer sheets does the player have a say in what happens? I always see people say this team or that team will sign a player to an offer sheet like it's just a thing the team does and the player just has to accept it. Is it like that?
It's the player's choice. An offer sheet is just a contract offer. The player has to agree to it and sign it just like they would with a standard player contract. If they aren't interested in the offer, they don't have to accept it.
Philadelphia Flyers general manager Daniel Briere has issued the following statement.
