I think that the funniest dynamic that we never really got to see in ouat is Regina and King George.
My headcanon is that these two can't stand each other. Like among the Black Knights it's the worst assignment to escort Regina to meet King George since she is famously even more prickly after seeing him and has killed Black Knights before since they breathed too loud when she was busy stewing in her rage and planning George's downfall.
Also the relationship progression is super interesting. Because at first they have business together because George already had trade agreements with Leopold and Regina didn't care enough to change anything. But during their limited interactions as two allied kingdoms, Regina came to hate George since he reminds her her awful dead husband whom she hated, and George barely thinks of Regina beyond since he doesn't take her seriously as an attractive woman (he sucks.).
And then Regina breaks off all trade with George's kingdom for absolutely no reason (the reason is the deal she made with Rumple in the flashback of s2 ep20 but George doesn't know it) and what the hell dude. Seriously what the fuck. It strengthens George's claim that women can't rule because they're too emotional, and that makes him hate her as well. And Regina breaking off their trade agreements is the first stone that leads to George's arrangement with Midas, and to his son's death, and the whole chaos that the stupid fucking shepherd brings to George's life.
So they despise one another. And they are forced to ally because Snow and David attack their kingdoms. And they hate it so so so much.
