Tonight on the menu: Homemade tomato soup topped with sun dried tomato pesto from scratch. I also made gluten free beer cheese with Angry Orchid and GF flour. I’ve been needing to get out of the house. I’ve been staying home as directed but need a break. So I decided to find an empty park about 3 mins away from my house and do some clean up. Fortunately, there were only 2 cars and never saw those people around the park so it worked out with all of the social distancing. I took every precaution so that I was out safely. This quarantine has made my anxiety so much worse than I could have anticipated. But having small moments like this helps my brain calm down. I don’t have medication for anxiety so this is the next best thing and it’s helped a lot. Vegetarian Huevos Rancheros 🍳 This was challenging because I had to make my own Chorizo seasoning. I used mushrooms as my meat protein and made a sauce for the Huevos! Also didn’t have black bean so I used Chickpeas. A little lime zest and lime juice, salt and pepper! I wish I had a bigger plate to show you how I layered it. But I made sunny side up eggs with butter for the first time. Amazing flavor! Topped it off with sour cream and queso cotija. Refried bean on the side with an iced tea.
