A bit of a long read for the first post of the year. But it’s only fair to speak about today in history. A year ago today was the opening of Bakehouse and the incredible adventure it represented for us. We were miles away to imagine how welcomed we would be in our beloved home city of Hong Kong. The team involved in the making of Bakehouse represents dozens of people. From Mark and JJ who are here every single day at 03:00 in the morning to freshly bake our bread and pastries, Yoko and Jufel busy cooking our breakfast and lunch, Miles, Giano and Forrest running the floor flawlessly (and keeping us awake with splendid coffees!), and our bakery team of Chai Wan who are mixing our 36 hours sourdough dough and folding our layered dough, our great packing team preparing all these delicate doughs for transportation, our excellent cleaning team keeping our facilities spotless, and our awesome office team supporting us with all the admin tasks. I can’t name all the heroes behind Bakehouse as it would be a very long list, but all of you know who you are. After realizing how much efforts Bakehouse represents, I am looking at croissants with different eyes, full of real stars and respect. From Day 1 until today, we have learnt lessons with our ups and downs. Surely we aren’t perfect, and we’re sparing no efforts to be the best we can. Considering it’s our first year, the outcome is tremendous and I can only imagine what the future holds for us with such a team!
