Almond Banana Oat Pancakes
1 cup oat flour (I make it in my food processor and buy big bags of gluten free oats from Trader Joe’s)
Handful of almonds
1 cup plant milk
1 large ripe banana, mashed
2 flax eggs
2 tblsp of maple syrup
stevia to taste if batter is not sweet enough
1/2 tbsp vanilla extract
2 tsp baking powder
1/2 tsp salt
I never thought that reaching my goal of losing 30 lbs. would ever happen. Vegan Whole Wheat Banana Raspberry Crumb Muffins
This was my first time attempting a muffin recipe of my own, and I'm pleased to say that other than me being impatient towards the end and messing up the crumble a bit, these came out DELICIOUS. Moist, tender and crunchy around the edges. Who doesn't love a crunch edge on their muffin top, amirite?
Topping:
4 tbsp AP flour
3 tbsp brown or coconut sugar
1.5 tbsp vegan butter
1/4 tsp cinnamon
Muffins:
2 flax eggs
1 large ripe banana
1/4 heaping cup packed brown sugar
1/4c coconut oil or vegan butter
1tsp vanilla extract
2tsp baking soda
1/2tsp salt
1.5 c whole wheat pastry flour
1/2c classic oats
1/3c frozen raspberries
1/2c chopped walnuts
Let's get started!
Preheat oven to 375F and lightly grease standard muffin pan (I used some spray coconut oil)
Make two Flax eggs and set aside to thicken (1tbsp ground Flax + 2.5tbsp water per egg)
Add banana and mash, leave chunks or not depending on your preference. Add brown sugar, baking soda, salt, and whisk thoroughly.
Mix in vanilla and melted coconut oil (or vegan butter if you prefer)
Incorporate flour and oats, folding in raspberries and (optional) Walnuts until just combined, it's very important not to over mix your muffin batter or they'll come out chewy rather than tender.
Fill muffin tins evenly (I prefer to use a large scoop for even division of batter) I opted for larger Cafe style muffins and so I only got 6-7 out of the mix but I filled them to the top. Fill till about 3/4 for more snack sized muffins.
In a dry bowl combine whole wheat AP flour, vegan butter and coconut or other sugar with a fork till crumbly like moist sand, top muffins and bake for 17-22 minutes until poker comes out clean and muffins are brown and your whole house smells like a bakery!
