A quick and easy summer squash green chile stir fry that's perfect for a paleo or vegan diet. This colorful and flavorful dish is a great addition to your summer menu, combining the freshness of summer squash and peppers with the heat of green chilies.
Ingredients: 2 summer squash, thinly sliced. 1 green bell pepper, thinly sliced. 1 red bell pepper, thinly sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 2 tablespoons olive oil. 2 tablespoons coconut aminos for paleo or soy sauce for vegan. 1 tablespoon rice vinegar. 1 teaspoon chili powder. 1/2 teaspoon cumin powder. Salt and pepper to taste. 2 green chilies, thinly sliced adjust to taste. Fresh cilantro leaves for garnish.
Instructions: In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and saut for about 30 seconds until fragrant. Add the sliced onions and cook for 2-3 minutes until they start to become translucent. Add the sliced summer squash, green bell pepper, and red bell pepper to the skillet. Stir-fry for 5-6 minutes until the vegetables begin to soften and brown slightly. In a small bowl, whisk together the coconut aminos or soy sauce, rice vinegar, chili powder, cumin powder, salt, and pepper. Pour the sauce over the stir-fried vegetables and toss to coat evenly.
