Ingredients: 2 cups all-purpose flour. 1 cup granulated sugar. 1 teaspoon baking powder. 1/4 teaspoon salt. 1 cup cold unsalted butter, cut into small pieces. 1 large egg. 1 teaspoon vanilla extract. 3 cups fresh or frozen blueberries. 1/2 cup granulated sugar for filling. 2 tablespoons cornstarch. 1 tablespoon lemon juice. 1/2 cup old-fashioned rolled oats. 1/4 cup packed brown sugar. 1/4 cup cold unsalted butter, cut into small pieces. 1/2 teaspoon ground cinnamon.
Instructions: Preheat your oven to 375F 190C and grease a 9x13-inch baking pan. In a large bowl, combine 2 cups of flour, 1 cup of sugar, baking powder, and salt. Cut in 1 cup of cold butter until the mixture resembles coarse crumbs. In a separate bowl, beat the egg and stir in the vanilla extract. Add the egg mixture to the crumbly mixture and mix until combined. Press half of this mixture into the bottom of the prepared baking pan to form the crust. In another bowl, combine the blueberries, 1/2 cup sugar, cornstarch, and lemon juice. Mix well. Spread the blueberry mixture evenly over the crust in the pan. In a separate bowl, mix together the oats, brown sugar, 1/4 cup cold butter, and ground cinnamon until it forms a crumbly topping. Sprinkle the oat topping over the blueberry layer.
