True: Spring was a no-show today. (At least for those of us that live in the Northern Hemisphere). False: It’s still cold out so it’s not the right time for fresh vegetable picks. If you’re like me, you’ve let winter take you over. And by that I mean, take over your mindset (and probably your body too…Let’s face it-‘hibernation-mode’ don’t look so pretty). Let this first day of Spring (even if right now it only feels like a date in the calendar) mark the start to ‘greening up’ your diet. I know the local supermarkets are a far cry from this lovely Provencal-market-crate-dream but trust me - find the greens, take them home and be inspired to start fresh! Eat Well.
