At minimum, we know they've had that knife on them since Chapter 2-they never had the chance to grab it from the kitchen without us noticing, but they already had it when they created TV Land at the end of the chapter, meaning they had it on them at the chapter's start. It's safe to say Susie's comment was spot-on and they really do carry it everywhere.

So why can't we see it in their inventory?

The Light World inventory may not be very important to gameplay, but it IS still interactable. We can make them eat the candy from Undyne or sell it to Sans, we can swap their equipped pencil for the Black Shard and back again, hell in Chapter 1 you could throw away your entire fucking Dark World inventory by tossing the ball of junk(real funny Toby). We can even buy hot chocolate if we've raided Asriel's drawer for money. It functions the same as the Dark World inventory, it just doesn't ever matter to gameplay. But Kris is able to break it, to break how it's supposed to work in a normal video game by having an item they're holding not show up in it. So with that genie out of the bottle, how far can they take this? Are they hiding other things? Is there another way they're able to alter our ability to perceive things? If so, does that category expand if they get some "help" from the Voice on the Phone?
