this is how much of the tofu ended up as scraps. don't worry i won't throw them away. very vaguely inspired by a salad i had at a vietnamese restaurant a while back. the dressing was peanut butter, soy sauce, huy fong chili garlic sauce, water and maple syrup. (didn't measure it. tbh the dressing was only ok... if i make this again i'll follow an actual recipe. edit: added some fresh lime juice. that's what was missing.) there are rice noodles, fried firm tofu tossed in soy sauce and chili garlic sauce, lettuce, cucumber, carrots, cilantro and peanuts. i'd never tried cutting tofu with a cookie cutter and it worked well! i was worried they'd be too fragile. they'd be really cute in a spring roll.
