Well done steak is an oxymoron
I remember my first job ever was as a dishwasher in a restaurant. This guy ordered a well done filet mignon. Chef made a well done filet mignon. Customer sent it back saying it wasn’t cook enough. Chef cooked it more. Customer sent it back again saying it wasn’t cooked enough. Chef cooked it even more. When he sent it back to the customer it looked like a charcoal encrusted shriveled up turd. Customer sent it back saying it was dry, chewy, and had no flavor.
I've worked in a couple of restaurants so far and a recurring theme with them all is that if you order something cooked a specific way and you don't get it back the way you think it should be, your the one who's wrong. The person making the "mistake" has probably been doing this every day for possibly years, they know what medium rare is, and the customer is usually wrong.
