Pork shoulder cooked in a 3 compartment crock pot. First from left is a #mexican style carnitas, middle dishes are potatoes & carrots braised in the shoulder bone, lastly a #Chardonnay & sage roast. I prepped everything last night, then set it all to slow cook for 10 hours. This morning, I packed it all in glass containers with Saran Wrap. Once I got home this evening, I heated everything up at 350F in the #oven for 1 hr. It was easy, fast, worry and hassle free. Driving from Houston to Austin and we get a flat tire on I-10, a 1/4 mile before exiting to highway 183. I tell my friend to pull over. Everyone is going 75+ and it's already dark out. We decide to cruise on the shoulder with a bad tire and exit to 183. We find a little shoulder away from the main road, and try to figure things out. I see an 18 wheeler and the passenger lowers his window saying, "you need help?!" And we just all look at each other "yeah, sure". He pulls his 18 wheeler over to the shoulder and immediately jumps into action. A random middle-aged man working to get us back on the road. His, what I presume to be, son came out from the cabin with tools and started to help as well. My friends and I just stand with our iPhones, flashing the flash light in order to help them out. It was very dark Fall night in the middle of Texas Finally they finish changing out the tire. I hand out a $20 to compensate them for their kindness. They immediately refuse and I tell them "please, it's the least we can do. We also have cookies and other food. $20 for dinner, it will be on us". The son says, "thank you, but we already have dinner". I see that their 18 wheeler had New Jersey plates and I ask him "where are you driving from?" and he says "Laredo to Ohio". I said "oh wow! Where do y'all live?" And the dad says "Michigan, but I'm Arabic. I'm a Muslim." He didn't hesitate to let me know his ethnicity nor beliefs, amidst the horrendous rhetoric that we hear and see on the news about Arabs and Muslims. I told him "Do not listen to the people who run for government saying bad things about y'all. People like me have the power to make sure that they're not elected. Thank you for your help. I know there are many good people like you who are Arabs and Muslims." He nodded at me, then said "go on!" I'm assuming so they could see that our truck was running smoothly. Then just like that, these random Arab Muslims who appeared out of nowhere in the dark Texas vastness, disappear from our view as we drive to Austin. He didn't have to stop to help and I didn't have to offer him money, but no matter what race or ethnicity, it is what makes us human, that triggers inside of us to do good, and help those in need when they need it the most. Thanks random Arab Muslim sir! I assure you that not everyone in the great state of Texas hates people like you.

So ask yourself, as an American from whatever ethnicity, or belief, you have in your blood "Were my ancestors ever refugees? Would I have turned them away? Why were they turned away?" If you have the hypocrisy to have turned your own ancestors away, then I simply wish you the best of luck.
