Brownie: $0.75 Ā Ā Ā Ā Ā Ā Ā Ā Ā Sell: $3.60 Ā Ā Profit= $2.85
Breaky Bar: $1.79 Ā Ā Ā Ā Ā Ā Sell: $3.50 Ā Ā Profit= $1.71
If we sold 50 of each product (200 units all together) we would: spend $244 and make $755. Profit = $511.00
Write up for presentation: With the taste-testing we did, we also asked participants to tell us how much they would pay for each product. We have determined our pricing by averaging over 100 of all of their answers. We then worked out the cost of baking and how much profit we would gain.
for instance, our cheapest Item to make is the cookie at 36c. By selling at $3.20 we make a profit of $2.83Ā
So, if we were to sell 50 units of each of our four products (so 200 units altogether) we would make a profit of $511.00
At this stage this would be more than enough to cover rent for a commercial kitchen at $190 per week and a trading license. However, the Nakery would need to expand in order to hire more employees.
As the stall needs no funding for upkeep, we see financial outlook as profitable, and response from the public as positive. Ā

Second round sample comments
So based off today:
Breakfast bar: Rosemary Hinchliffe - Average rating of 7.5 - Average Price should be $3.50 - The sweetness and how crumbly it was are the things that needed changing - Out of 18 Testers
Brownie: Anna Bittle - Average rating of 7.6 - Average Price should be $3.60 - So many people commented on different things: More chocolate, solidfy, presentation, eggy taste, cream with it, sweeter, and drier were the comments - Out of 29 testers
Scroll: Nikole McGillivray - Average Rating of 8.8 - Average Price of $4.80 - Things to change included adding herbs, side sauce, burnt, dry, to much tomato, warm and size - Out of 20 Testers
Cookie: Summer Mark - Average rating of 8 - Average Price $3.20 - Changes were: more chocolate, packaging, thickness, look, less peanut butter, more sugar, less sugar, salt on top, warm, softer, signage - Out of 43 testers
There were lots of good comments also but as a whole I think we need to better signage which could be done with the little signs in front of the crates saying what it is and what's in it. Packaging was something mentioned a few times which we may need to think about and mention in the presentations that people wanted. Also having the actual sizes packaged up perhaps just to show what it could look like and the sizing

Cookie Feedback Round 1
The basic feedback for our first tasting ranged quite rapidly. The average rating was 6.6.
The price for a small cookie averages $1.60 which is a lot less then we were hoping but perhaps once we have the correct sizing this may change.
The comments were larger cookies, more chocolate, fluffier and that they were dry.

Presentation Feedback
- Think of better way to order the presentation, maybe think about doing it like a food menu (breakfast = bar, lunch = scroll, afternoon tea = cookie, dessert = brownie)
- Donāt wait until the end for samples, give them out first, maybe get them to try each as we go through presentation points
- Ditch the recipe box idea :(
- Think about an online aspect like an app for consumers to share/create/submit their own recipes.

Comments:
Most comments people wanted more texture or crunch, such as adding in chocolate bits, nuts, or berries. Some comments stated the brownies were too mushy and soggy (could be because brownies were in fridge for a few days), and others stated they wouldnāt want anything changed.

Ok, so depending on what we would do - hawk, stall or trailer, It looks like we would first need to; -read theĀ ātrading in public places policyā and or āFootpath Management Policyā. -Apply for a trading license -Apply for aĀ Certificate of RegistrationĀ -And unless we were working from a commercial kitchen that has passed all Ā Ā Ā health and safety requirements, our kitchen (has to be on-site i.e mobile food Ā truck or van) would be inspected and approved before we got a trading Ā Ā license.Ā
I canāt find out the price of these licenseās as they differ for each set up. Charity stalls etc are freeĀ

the bars were generally very well received but to combat some of these issues I can: pack down mixture more to make dense and less crumbly, melt the wet ingredients less when adding into mixture to make mixture stiffer and try using cornflakes instead of weet-bix to make them gluten free. Ā Ā Ā

cheese muffins
2 cups of grated cheese
1 tin of corn (drained)
1 1/2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
1Tblsp sugar
1 egg
1 cup milk
combine dry ingredients in a bowl, beat egg and milk then mix into dry ingredients, spoon mix into muffin tins and bake at 210 for 12 min
