I posted this on my story but I wanted to share the recipe in case anyone is curious. This is the best potato salad I have ever tasted at 5:36AM. However, that being said, it’s very good. Potato’s, fine dice red onion, celery, BACON, celery seed, salt pepper. Dressing: 1 cup mayo, 1/2 cup whole grain mustard, rice vinegar, sugar, and a few dashes of Worcestershire. So good! I was going to add eggs, but I didn’t and it’s still so good. This week I have twice now been off book and just creating based on a few recipes. Today is my and Betsy’s fourth anniversary!! It is truly amazing to think back on all the changes that we have gone through in the past four years of marriage together. We have had highs and we have had lows. Betsy is one of the most patient, understanding, bright, funny, and interesting people I have ever met. I don’t think there are enough people who truly experience joy the way Betsy does. She finds happiness and joy in everyday life. Betsy is truly someone who I feel lucky to have known and I truly don’t think there is anyone else who makes me as happy as she does. There is no one in the world who I would rather spend the last four years with. Here’s to the last four and here’s to the next 40!! Tried my hand at chicken pot pie. It’s far from perfect but not bad for a first try. I tried to vent the top in the shape of a “K” for Kausch. Didn’t quite work.
