Hell of a dinner at SALA de Joao Sa. Many thanks to Paolo and the team for beautiful food and great conversation. Homemade sourdough & Azores-style bread with chilled, pureed cabbage & olive oil, butter. Celery & mushrooms: Pureed celery under roasted celery root cones, topped with sauteed mushrooms, under a mushroom sauce, with roasted pine nuts & tiny sorrel. Pork & clam bao: Topped with Coriander Mayo with roasted garlic. Dry-roasted Scarlett shrimp: With pork creme brulee, topped with chestnut and dehydrated pork belly. Shrimp essence sauce (reduced head material). Sous-vide Meagre: With mussels & port-pickled onions. Garnished with seaweed and coriander salad. Served with mussel & coriander foam. Slow roasted leg of lamb & demi-glace: Served with sunchoke puree, pickled pomegranate, watercress, and sunchoke skin chips.
