oooh I just realized that in the execution scene the Count says to Franz “death may be a torture, but it is not an expiation” to explain to him why he's so interested in methods of torture and execution, and then chapter CXI, where pain and grief make De Villefort go clinically insane, is called "Expiation"... I guess he did reach the level of torture he desired with this one, and then it terrified even him.

Fernand is so against the idea of Edmond marrying anyone at all in this movie (even before it turns out it's Mercédès and she has agreed) it looks like he thought he'd just keep Edmond for himself.
