WHATāS COOKING AT CEDAR HOLLOW THIS AUGUST
August always feels like the kitchen standing between two seasons.
The tomatoes are heavy on the vine, basil still smells like summer, and the afternoons remain stubbornly warmābut the evenings have begun to soften around the edges.
Iām not quite ready to surrender summer.
I have, however, started thinking about soup.
This month at Cedar Hollow, Iāve been working on recipes for that exact moment: when the market is still overflowing with late-summer produce, but something warm simmering on the stove suddenly sounds very good.
CREAMY HERB CHICKEN
Most of my recent recipe notes have been devoted to Creamy Herb Chicken with wild rice.
It began with a simple idea: deeply golden chicken cutlets in a silky garlic, shallot, and herb cream sauceāthe sort of dinner that feels special but doesnāt require an entire Sunday or every pan in the house.
Naturally, āsimpleā still produced several rounds of testing.
There were pale cutlets, a sauce that simmered too enthusiastically, and one early version in which the rosemary arrived with the confidence of a lead actor.
But the final recipe is exactly what I wanted: savory, fragrant, comforting, and practical enough for an ordinary evening.
The complete Creamy Herb Chicken recipe is coming to Cedar Hollow next.
TOMATO SOUP WEATHER IS APPROACHING
Iāve also been testing a slow, deeply flavored tomato soup made with whole peeled tomatoes, softened aromatics, herbs, and just enough richness to round everything out.
Tomato soup belongs to the colder months, but August tomatoes bring something especially lovely to it. They hold onto the brightness of summer while the warm bowl quietly suggests what is waiting around the corner.
Iām still refining this one. The goal is a soup that tastes full and comforting without becoming heavyāand that absolutely deserves a grilled cheese beside it.
WHAT IāM REACHING FOR RIGHT NOW
Late-summer cooking has me using:
⢠Ripe tomatoes ⢠Basil torn at the last moment ⢠Dried thyme for soups and sauces ⢠Fresh parsley for brightness ⢠Garlic and shallots in unreasonable but defensible quantities ⢠Wild rice when dinner needs a little more substance ⢠Cream used gently, because a sauce should be silkyānot frightened
Cedar Hollow is becoming a collection of recipes for real home kitchens: food that feels beautiful and comforting without demanding perfection.
There will be practical cooking notes, seasonal recipes, printable recipe cards, and the occasional honest account of what went sideways before a dish finally worked.
For now, the rain has started against the window, the skillet is warm, and dinner is almost ready.
Which are you still holding onto: summer tomatoes or the first hint of soup weather?
