My Christmas cookies this year were little soul gems!

You’ll need:

- 480g flour - 300g butter - 4 egg yolks - 2 small packets of vanilla sugar - 130g powdered sugar - lemon zest (use 1 1/2 lemon) - pinch of salt - marmalade of your choosing (strawberry is always a good choice) Kneed all of the ingredients together until you’ve got a smooth dough. Now put it in a cool place for about 1 or 2 hours. Preheat you oven (200°C for top and bottom heat/ 180°C for circulating air) Roll out your dough and cut out your cookies (make sure you have an even number). Take half of your cut cookies and use a smaller cookie cutter to make a hole in the middle.

Put them in the oven for 10-15min. I recommend to check on them at around 10min. Make sure they’re not getting brown!

Take them out of the oven and put a bit of marmalade on them as long as they are still hot. Now take the ones with the holes in them an put them on top.

Now they are all done. If you like, you can sprinkle some powdered sugar on top as well.
