Healthy Potato Soup Small roasting potatoes 2 leeks One head of broccoli A cup of carrots 1 TB butter 1-2 TB olive oil Thyme Salt One container of chicken broth (or veggie)
1 bay leaf
Sauté all veg for a few min in butter and olive oil. Sprinkle with salt and thyme. Add bay leaf. Pour broth over to nearly cover and simmer until potatoes are cooked. Use an immersion blender and blend until smooth.
Comfort Kale Soup
This was so good Russ and I ate almost the whole pot in one day!
1 clove garlic
1 box chicken stock
1 onion
Olive oil
Lots of carrots
New mini potatoes quartered
Red pepper flakes
Rosemary finely chopped
Fresh chopped Kale
2/3 cup green lentils
Thyme
Salt and Pepper to taste
Chop carrots and onions with red pepper flakes. Put vegetables in the dutch oven with 2 or so TB of olive oil and sauté on medium high heat for a few min while you half and quarter the mini potatoes. After the onions start to soften, add in 1 clove minced garlic and the chopped potatoes. Stir for a minute. Add more olive oil if needed. Add herbs and stir for a few seconds before you dump in the box of chicken stock and lentils. Simmer. Meanwhile chop the kale, being sure to take the tough middle stalks out first or else it will be chewy. Finely chop the kale and wash. Dump in the kale and stir. Simmer until lentils are soft.
Review: Barcelona Eats
It has been a long while since I have visited the blog but I am choosing to end 2016 with the positive things that happened so that I don't get totally depressed by all the negative things that the news channels are reminding us of in montages... devastating election results, too many needless deaths, bombings, racisim,... awful things that are important to not forget or ignore... But let’s take a moment to remember the good things in life that happened this year. For my husband and I one of the best memories was visiting Spain. We ate, drank, hiked and biked our way through Catalonia. It was beyond lovely and we were so happy to finally take a vacation longer than 4 days! Here are some of the photos of our favorite foods, and I will highlight below a review of 2 favorite restaurants although we did not have one bad meal the entire time.
La Platilleria
This wonderful little tapas bar was near our hotel in poble sec, (great neighborhood to stay in if you want something different than the traditional gothic quarter). We loved La Platilleria so much we ate there twice and didn't regret it. The octpus salad (pictured with pan con tomato) was a favorite along with their house olives. We tried at least half the menu and it was all fantastic. Located on Carrer del roser, Barcelona.
Casa Lolea
Casa Lolea we spotted when we first were in Barcelona. We found it on a very quiet street where there really wasn't much else nearby and made sure to make a reservation for the weekend when we were back in town. This is touted as one of the best hidden gems in the city so I would not count on walking in. The sangria is superb and they are known for it. We loved the charcuterie and the atmosphere. We even loved how they spelled Russ’s name :) Located on the edge of the Gothic Quarter on Sant Pere Mès Alt.
Review: The Brewer’s Fork
My husband and I found ourselves biking around in the heavenly weather yesterday and we decided to try the Brewer’s Fork in Charlestown. I don’t normally do restaurant reviews but we had such a wonderful experience I wanted to recognize the deliciousness the team at BF is producing. The beer selection is A+. They have a well-curated assortment from the very herby to the strong and dark. I had the Founders Spectra Trifecta and loved it’s chamomile flavor. Russell and I split a clam pizza which is probably one of the best things I have ever tasted for lunch. It has all the flavors of clam chowder but on a pizza which sounds kind of strange until you taste it and then savor every bite. A bonus is the wood and metal decor and a patio to tan while you eat.

Perfect Banana Bread This recipe is from my mother except I use coconut oil instead of butter, and I use maple syrup instead of white sugar. 3 bananas ½ c Coconut oil ½ c maple syrup ½ c Brown sugar 1.5 c Whole wheat flour 1 tsp Baking soda Dash of salt 1 Egg Bake at 325 for 45 min to 1 hour.
Cauliflower Leek Soup 2 leeks One head of cauliflower Olive oil Half a large onion One garlic clove Pepper Salt Vegetable broth Parmesan cheese Sauté vegetables in olive oil and dash of salt for a few minutes then cover with broth and simmer 10 minutes until vegetables are soft. Stir in cheese and drizzle olive oil on top. Cheese is optional if vegan!

Broccoli Pesto 2 heads broccoli steamed 1/4 cup or so pine nuts Hand full of fresh basil 3/4 c olive oil 3/4-1 cup Parmesan 4 cloves garlic Dash of salt.
Put all of the above in food processor and pulse until smooth.
Asparagus and Spinach Soup
One bunch asparagus, Equal amount fresh spinach, Onion, Garlic, Lemon, Red pepper flakes, T butter (optional), Olive oil, Salt & Pepper, Oregano, Hearty vegetable broth.
Chop vegetables and sauté all in olive oil and butter (except for the spinach). Add in the herbs and seasonings and stir. Add in the broth and simmer for a few minutes, adding in the spinach at the very end. Blend in blender or immersion blender. Top with Parmesan cheese (optional).

Healthy Zucchini Soup
2 zucchini, 2 small onions, 2 small carrots, 1 garlic clove, Olive oil, 2 T butter Oregano, Bay leaf, Salt, pepper, Hearty vegetable broth, Coriander, Squeeze of lime juice.
Sauté onions and garlic in olive oil, add chopped zucchini, carrots and sauté for a few minutes. Add in butter. Add salt and stir. Add in vegetable broth until it doesn't quite cover the vegetables. Add in herbs and spices. Simmer until vegetables are soft. Put in blender and purée.
Polenta Yum Shiitake mushroom Sundried tomatoes Can diced tomatoes Onion 2 cloves garlic Italian seasonings Olive oil Balsamic vinegar Italian fake sausage (tofurkey or field) Instant polenta 4T butter Parmesan cheese Pepper Salt Fresh asparagus
Favorite Soup
I dedicate this post to Heidi Swanson, author of Super Natural Every Day. Her recipe for Green Lentil Soup with Curried Brown Butter has saved us many weeknights from having nothing in the house to whipping up this delicious and hearty soup. I follow her recipe from her cookbook (which I highly recommend) and can also be found here on her blog 101 cookbooks. The only thing I change is adding in carrots and cooking them in with the onions, and I do not puree the soup, as the texture is quite pleasant. Thank you Heidi for a wonderful, easy, healthy recipe!
