Stephabios
Dinner at fabios On the night of November 20, 2017 i had the opportunity to be invited to a celebration of friendship and love at this little place called Stephabios (Stephanie and Fabio name combined). Let’s begin this article by talking about the journey to the location, located just a CTA train away from downtown the beautiful city of Chicago. If you find yourself by the loop, hop on the Brown Line to Kimball and get of in Western stop. On the way down the platform you can stop by and admire a piece of the Berlin Wall up for display, also look at some homeless that are just strait up just chilling by the train station now by no means be dick to the homeless since they are just trying to get their shit together just like everyone else. Head south on Western Ave, its just a 5 minutes away from the train station and you will get to a little apartment complex. Get on the first door to the left and wring the bell for labeled Stephanie Millan / Fabian Alfredo Avila. With in a matter of minutes you will be buzzed in, open the second door and begin your trip to Mount Everest, no thats a joke but brace yourself for a little gluteus workout, thats right ladies some you will definitely get your rear end in shape if you keep coming here. But in all seriousness, get your ass ready. Go all the way to top floor and you will see a door with the correct decor, a thanksgiving wreath because its right before thanksgiving, duh. You will be welcomed by a friendly dog named Lady, and yes its a she, duh her name is Lady. Lady’s parents are Fabio and Stephanie, 2 Mexican young adults. The space was great, one criticism is that it should definitely have more art of pictures hanging in the walls, it will bring the eyes up and will transform the one bedroom apartment to a beautiful place they could call Home. The menu was a modern take on a classic thanksgiving dish. There was smashed potatoes with gravy, but i will call it graBeans(since it literally looked like smashed beans), mac and cheese, 2 chickens in the oven one was a lemon and the second chicken a paprika season with chorizo stuffing. Yes by nature you will not associate both chorizo and chicken but this is why this was a modern take on a rather boring dish. The chorizo was right on point, no grease. It was perfect. That chicken and the graBeans was the talk of night. How was it possible that he could make gravy to look just like beans? Well he did it. And how was it possible that he didnt fucked up the chorizo stuffed chicken? Well the madafaka did made it happen. There was an open bar so i decided to drink Palomas Blancas all night. As the night the i got to know more the cheff. He talked about how much he appreciates cheff Alton Brown and his style of cooking. Fabio is such an interesting person because he would like to replicate Alton he follows his heart. He felt the the chicken needed chorizo so he just went with it and made it work. Once we were dont with the main entry we moved on to deserts. There was apple pie, pumpkin pie and cheesecake of many flavors. I obviously finished the apple pie. And the evening came to an end i came to the revelation that those madafakas completely ignored me when i asked for tortillas, and that was the biggest flaw of the night. I would like to thank them for inviting me to be part of this broken toy box i call my friends because we are all fucked up in many ways but some how we found each other and are able to enjoy a meal in peace and with love.
