If they saw only in thermal, it would make it difficult for them to use their equipment and technology, especially the vision modes of their masks - which in addition to the EM and infrared, also includes ultraviolet and x-ray settings.

Also, while they do have a lot of reptilian traits, they also have mammalian traits. Add in that they're bipedal and omnivorous (they probably favor a meat-based diet on the hunt but have a more varied diet on Yautja Prime), it would be disadvantageous (dangerously) for them to see only in thermal vision.

I think they prefer the thermal vision (and the Xeno EM vision) because it makes it easier to track their prey, especially because many animals (humans included) are adept at camouflage. This is why we see City Hunter using multiple vision settings in Predator 2, which was probably developed after studying the data from Jungle Hunter's mask.
