I’ve wanted to get back into cooking weekly batches of white button mushrooms for my family and I, but from experience, the long cooking time (2+ hours) needed to destroy the mushroom’s hydrazine and agaratine content vaporises it into every inch of the house (you can see the condensation on windows) and I don’t want my family, or magnolia breathing all that nasty stuff in.
Toying around with the idea of using an Instant Pot, but only if it completely contains the vapours so they can be released outside.
