It's done! ∙ O ∙ is for Opéra Cake! It is boldness in one bite! The classic Opéra Cake is a work of beautiful intensity in six acts. Three layers of Joconde biscuit impregnated with coffee syrup, two layers of coffee cream and in between all that, a dark chocolate ganache. At the end, a touch of gold leaf. As a little side note, the music used in the decorations of my illustration comes from my favorite opera: “ Carmen”. Surprisingly (or maybe not), Macarons originated in Venice during the 8th Century AD, and were brought to France by Catherine de’ Medici in 1533. Around the 1830’s Macarons began to appear two-by-two with jams, liqueurs and spices in the middle. The film “Marie Antoinette” along with Pâtisseries like Ladurée and Pierre Hermé have transformed the Macaron into a modern icon of French elegance and delicacy. "Bliss from the first bite". That is the official description of the Ispahan by Pierre Hermé (its creator). This dessert is a masterpiece. Two pink macarons and in between, a lychee covered by rose buttercream enveloped in fresh raspberries.
