HxH-inspired tamago-kake gohan
In writing "Postcards", I incorporated a reference to the 1999 anime where Gon notes his specialty in cooking of tamago-kake gohan (卵かけご飯 or TKG), which I also then tried to make based on some research online and referring to different online recipes.
After a few attempts, I've iterated towards what I think is the tastiest version, so I thought I'd share it with you all! It's super simple to make and really comes down to balancing the flavours you like best.
⚠️ disclaimer ⚠️ I live in a country where eating raw eggs is not so risky (e.g. pasteurised), if that's not the case where you are, then perhaps avoid this recipe!
Ingredients (*required/recommended, others optional)
*Japanese rice (~75g per person/egg)
Rice wine vinegar (a dash mixed into cooked rice)
Sesame oil (a dash on top of egg)
MSG powder e.g. Ajimoto (sprinkled)
Dashi of some kind, e.g. Katsuo dashi (sprinkled)
Furikake seasoning (to taste)
Shichimi togarashi (to taste)
Black and white sesame seeds (decorative)
Cook rice in rice cooker or otherwise.
(optional) Stir in a bit of rice wine vinegar into the cooked rice.
Put rice in bowl, make small dent in rice for egg.
Crack raw egg into the hollowed dent.
Pour some soy sauce on top.
(optional) Add your preferred subset of sesame oil, MSG powder, dashi, furikake, shichimi togarashi and wasabi paste.
(optional) Sprinkle with sesame seeds.
Mix quickly until creamy, while the rice is still very hot!
You'll notice I have a lot of optionals - vary accordingly depending on what flavours you like and what is available to you!
If you don't like spice, then skip the shichimi togarashi and the wasabi paste
I found the rice wine vinegar helped to give it a bit of tang and balance out what is otherwise a lot of "sweet-ish" ingredients
Always like a bit of sesame oil
A number of recipes suggest adding an extra egg yolk after mixing, but I found that made it a bit too eggy (possibly because my rice amount was low comparatively - I've been doing snack size portions rather than full meals)
Mirin sometimes features in recipes but I preferred a more savoury flavour so I skipped it here
