Tomato and olive pasta
As the end of the working month is approaching, we're going frugal today. I grab what I can find in the fridge and quickly wack everything together to make a dinner out of it. I have to say it doesn't taste too bad, though!
2 portions of any type of pasta (frusilli here) Black pitted olives in brine 3 plum tomatoes, chopped 1 medium onion, chopped 2 cloves of garlic 1 tbsp tomato puree Parmesan cheese
1. Boil the pasta to al dente. Drain it and set it aside.
2. Heat up a saucepan and put a dash of olive oil, onion and garlic into the pan. When the onion is softened, stir in the tomatoes.
3. Put a tbsp of water if the pan is dried up. Drained the olives and then put it into the saucepan as well. Then, add the tomato puree into the pan, and also 1/2 cup of water and bring it to boil.
4. When the sauce is boiled, lower the heat and simmer it for 10 minutes. Add a pinch of herbs (in my case, some oregano and basil) and salt and pepper to taste.
5. If the pasta has gone cold, pour it into the sauce pan and cook it with the sauce for a minute. If not, put the pasta on a plate and then pour the sauce on top. Grate some Parmesan cheese on top and then you're good to go!
