Honestly, what helped me the most in realizing if I was genderfluid or not was looking through the genderfluid tag on tumblr. I can’t think of any books or docs to recommend but I can give you a bit of my own experience!

For me, I define my genderfluidity as fluctuating dysphoria. Some days, I wish I didn’t have boobs and wish I had a penis. I feel very much like a man. But then, the next day I could feel completely happy with my body. Sometimes, I just kinda feel meh about gender and don’t feel feminine or masculine at all. That’s where I typically am most of the time.

Sometimes, my gender fluctuates multiple times in a day. One day, my friends and I dressed up in fancy dresses and went to the mall. I was feeling very feminine and happy about that. About halfway through, I started panicking about the fact that I was being perceived as a girl. I was thinking “oh no this isn’t who I am but everyone is going to think I’m a girl”. I desperately wanted to change into more neutral clothes so that onlookers could see the real me.

Sometimes, gender doesn’t even phase me and genderfluidity doesn’t even cross my mind. I just feel like me.

Bisexuality definitely includes non binary people, you’re right! However, pansexuality is more about not having a preference. Someone who’s bisexual may have different feelings when they’re attracted to a man, woman, or someone of a different gender. Some pansexual people have described their experience as not feeling differently based on what gender they’re experiencing that attraction to. It all feels very similar to them.
