First make your cheesecake filling

1 8oz pack of cream cheese softened

1/4 teaspoon vanilla

1/2 tablespoon espresso (or coffee)

3 tbs white sugar

1. Mix everything together and the spoon dollops (about the size of a quarter) onto a sheet tray and pop into the freezer for a few hours until frozen solid. Forgot to take a picture of the cheesecake balls before I froze them and did it when I was almost done.

Cookie dough

2 sticks of butter (1cup) softened

1 Cup white sugar

1/2 cup brown sugar

1/2 tsp cinnamon

1 tbs vanilla

2 eggs

2 3/4 cups of flour

1 1/2 teaspoon cream of tartar

1/8th teaspoon baking powder

1/2 tsp salt

1 teaspoon baking soda

1. Cream together butter and both sugars

2. Add your egg and vanilla mix until combined

3 add your dry ingredients and mix until just over mix. Should be a thick tacky dough (forgot to take pic of it)

4. Take a 2oz scoop and scoop. Into your hand flatten the dough and add a frozen cheesecake ball in the center cover the cheese cake intently with the dough and then roll in cinnamon sugar

Should be a pretty good sized ball mine made about 20 I had some cheese cake balls left over.

5. Set your oven to 350 and bake for 8 minutes. Should start to crack a little at the top.

I only baked 4 at a time and they got huge!

6. Melt down some chocolate chips, I used dark chocolate but you can use whatever you like and drizzle it into the cookie in any design you want.
