8/25/25 - 水煮鱼 (Sichuan/Szechuan Boiled Fish)

Basa filet, poached in a spicy and uniquely Sichuan broth, cooked with celery + cabbage, and served over rice! Made with my partner, and with the help of this recipe from Red House Spice!

The fish was so incredibly soft, and the broth so spicy and savory. This whole dish was so deceivingly hearty but light at the same time? It was very filling, but it felt like you could keep eating it forever!

This is the second dish that my partner and I made during his trip down to where I live! The summary is that he had jaw surgery, and could only eat soft foods, so I brainstormed a big list of dishes featuring soft foods for him. This dish was actually made alongside another, which will be in a neighboring post!

When I was researching foods that people could eat after jaw surgery, I stumbled across a brilliant Redditor's suggestion for Sichuan Boiled fish! Neither myself nor the rest of my family have any relation to Sichuan, but ever since I had this dish in a restaurant, I'd fallen in love. It was such a throwback to a memory I didn't even realize I had, and it was so lovely having the chance to revisit it.

Fish so hot. Hot hot fish. Fish so hot I remembered a dish.

Being a henchman suuuucks dude. This latest guy I'm working for, the War-Madillo, he's got a, an Armadillo- motif, or theme, or whatever, right? That's fine, fine, I did a two-month stint with a Marmoset-themed guy once, it's not bottom of the barrel- except. Except. It turns out, he picked the Armadillo thing because he thinks that they're obligate carnivores. Which they kind of are, I mean I googled this, they're insectivores, but he thinks that they're like, land piranhas. He thinks they work in packs to take down significantly larger animals. He thinks they lay eggs in the remains of their prey. He's killed like three guys for trying to correct him. Me and the other guys are paying out of pocket to get the poor little guys in his Armadillo pit food that they can actually eat. Every time he drops some sucker into that thing we all have to draw straws to see who's gonna have to go in and gnaw on the body so he thinks the Armadillos are doing it. Thank god it's such a long drop
