Toronto has a few spots with made-to-order, custom ice cream sandwiches. The most notable: Bang bang Ice Cream. Choose your cookie (they have gluten free and vegan variants too!) and ice cream, and get the dessert sammy in the half or full size. I got key lime pie ice cream (look! There’s event graham crust bits in the ice cream!) with birthday cake cookie, as recommended by the staff. They also have ice cream sandwiches made with puff pastries and ice cream wrapped in Hong Kong-style bubble waffle, on top of regular cones.
