Busting Some Myths Associated With Type 2 Diabetes

• If you are diabetic can you take carbohydrates? The answer is yes but in moderation. Remember you need to consume a balanced diet. It is ideal you go for whole grain carbohydrates. Big Pharma pays $31.5 Million to ADA, Supremely Naive?
Diabetes is a numbers game. In fact our healthcare (or should I say Deathcare) system is a numbers game.
Big Food, Big Pharma and the Medical Industry contribute millions and millions of dollars to the disease protocol groups… the American Diabetes Association (ADA) , the American Heart Association (AHA), American Cancer Society (ACS) etc. That’s a fact (proof below)
Two Questions to Ponder
1) Do you really think those corporations would continue contributing millions and millions of dollars, year after year… if there was no Return on Investment (ROI)? If corporations did not see increased sales from their investments, what company in today’s climate can afford ‘throwing money down a hole’? … not many.
2) Do you really think these disease protocol groups are not influenced by tens of millions of dollars donated by large corporations annually?
If you believe that the ADA, AHA and ACS make dietary decisions without considering their corporate sponsors… you are supremely naive.
Why else would the American Diabetes Association continue to push a high carb, grain based meal plan to the ONE GROUP that needs it the LEAST!?! … diabetics.
The answer was $ 19 million in 2009, I wrote a post about it, “$ 19 Million Reasons“, go to that post and you can see the large drug companies that contributed $ 19 million dollars to the ADA!!! Now, are you going to tell me that does not influence their dietary guidelines?? When their high carb meal plan causes more drugs and MORE INSULIN!

The top three insulin produces alone contributed $ 22 million, these three ALONE contributed more than all of big pharma combined in 2009!

Any one with a blood glucose meter KNOWS that breads, cakes, cookies, pasta and cereals raise blood sugar. All high carb foods raise blood sugar.
Helloooo, diabetes is ‘high blood sugar’ or hyperglycemia.
When blood sugar goes up, what must people do? Buy more insulin and diabetes drugs.
The ADA’s meal plan without a doubt sells more insulin and drugs.
If Alcoholic’s Anonymous promoted a alcohol treatment program featuring the drinking of 1/2 a fifth of liquor per day… and AA was funded by Jack Daniels, Smirnoff etc … people would raise HELL!
There is most definitely a conflict of interest … the only ones benefiting from the high carb ADA meal plan is Big Pharma, Big Food and the Medical Industry.
Tell me, are you so SUPREMELY NAIVE as to believe there is not a connection? Really?

Why do a 30 Day “Meats and Leafy Greens” Challenge???
When I originally did this a couple of years ago… (read this) I wanted to see the effect of eating ‘super clean’ (no dairy, no nightshades, no eggs) had on my insulin resistance. The thought was, if I remove all ‘possible’ inflammatory agents (yes eggs are inflammatory to a small percentage of people) that perhaps my body would heal itself.
There is no doubt that I have improved my insulin resistance but alas … I still had insulin resistance as noted in this post, “Dear Pancreas You May Rest Now“.
I began another 30 day Challenge. This time the reason was different.
Last time I did this I lost 10+ lbs. When I woke on January 10th and I weighed 169.4 … gaining 8 lbs since injuring my shoulder on September 25, 2013, I decided enough was enough.
If you have a few pounds to lose or if you have stalled on a ‘low carb paleo’ plan… I strongly urge you to try this for a couple of weeks… or (4).
In short, I only eat fatty meats, leafy green veggies, coconut oil and ghee (clarified butter). I only drank water, unsweetened coffee and unsweetened tea. ( I do drink my coffee with coconut oil and ghee).
I avoid dairy, especially cream, half and half, sour cream and cheese. Why? I do not believe in the two extremes of caloric accounting. I do not believe in ‘calories in vs calories out’ equals weight gain or loss… nor do I believe ‘calories do not count’.
I do believe that extended over consumption of energy (calories) will lead to weight gain… it does for me. Our bodies are much more complex for a single sentence explanation of weight loss or weight gain. Stress, inflammation, lack of sleep among other factors impact weight gain/loss.
I avoided dairy because these foods, especially cream, butter and cheese are addictive to me (and high in calories),
I love to drink cream by the cup! I call it… ‘the nectar of the gods!’
My Result
Weight:
My weight this morning was 161.6 my low during the 30 days was 160.8
From my weighing this morning I lost 7.8 lbs … not too shabby in 30 days.
My Energy Levels
Losing weight is fine, but if you do not have gas in the tank to play, work … and LIVE! … then you are doing it wrong in my opinion.
My energy levels stayed high. I have eaten a high fat, low carb meal plan for over four years. My body is ‘fat adapted’ and runs very well on high fat foods.
During these 30 days, during a 5 day span I ran strenuous hill sprints four out of five days.
I had also re-implemented my Push Up and Kettle Bell swing workouts in earnest. I had ended them while rehabbing my shoulder.
In short, there was no ‘energy shortage’ from the meal plan. I noted this as well in the previous challenge two years ago.
I’ll close this section by showing the picture below. On this particular day I rode my bike 9 miles to a near by park and back. While at the park I did my usual regimen of push ups, pull ups and sit ups It was a great day!
I stopped to take this picture of food … living as food should live.
Food Journal
Here are the numbers… fats, protein and carbs.
Note:
Protein: I looked at my food journal a couple of weeks into the challenge and I was shocked. My protein was around 67 grams per day. That’s much lower than I like it, I like to at least be above 100 grams of protein.The second two weeks I averaged around 100 to bring the average up to 83 g per day.
Since losing the weight, I’m going to attempt to build more muscle, I’ll be increasing protein into the 130 grams per day.
Fat: My typical fat range is 75-85% and this was no different. I like it.
Carbs: I LOVE THIS! 5 grams of carbs… per day! And it’s all green leafy vegetables too!We do not need carbs to SURVIVE! … nor THRIVE!
** Potato Starch** : I did consume about 40g of Potato Starch per day, which contains approximately 32g of Resistant Starch. *** I did not include it in the data because if eaten raw it’s not ‘actionable carbs’. It does not convert to sugar, it’s a 3rd type of fiber… read this if you do not know what potato starch / resistant starch is.
Summary
If you have stalled or plateaued on your current meal plan… I urge you to give a ‘fatty meat and leafy green veggie’ meal plan a try.
My blood sugars, as you would imagine were marvelously stable. This meal plan works good too if you are having trouble maintaining normal blood sugars. My carbs ranged from 0-5 most days, my high was 10g of carbs.
As noted above, my energy level stayed high … but I was already fat adapted. If you are not fat adapted, you may experience the normal symptoms of going low carb.
My goal weight was 159, I did not quite get there… but I’ll take a 7 lb drop in 30 days, especially if I maintain my energy levels.
I will be starting more resistant starch / potato starch testing today. I’ll be eating highER carb foods such as sweet potato, white potato, beans and rice… so stay tuned IN!

It is true I am eating beans… for science!
Do NOT skim over the notes… please. Read all of these notes very carefully… read for comprehension. (it’s important!)
Personal experimenting is a way that we can truly learn about our bodies. My chief tool is a glucometer, used for testing blood sugar levels.
I am performing experiments with potato starch / resistant starch. If you don’t know what this is, or if you believe incorrectly that it’s ‘just’ starch … read these posts first, “Intro” and “Q & A“, if interested here’s a tag to all of my potato starch posts.
Notes
1) I have been ‘supplementing’ with potato starch (resistant starch) since 11/22/2013. There is NO QUESTION that my gut bacteria has changed and adapted to consume resistant starch.
If you have not been taking 2-4 TBS of potato starch (or resistant starch) for at least 2-4 weeks, I can all but guarantee your experience will be different. Very different. As always Test, test, test. Do NOT assume your experience will be like mine.
2) I do NOT suggest that anyone eat legumes (beans) unless and until they have beaten the grain / carb addictions for at least 2-3 months AND have normal blood sugar. Why? Starch converts to sugar (glucose) in the blood stream and can reawaken the carb addiction.
3) I do believe legumes (beans) are inflammatory so I do not suggest people eat beans unless they have weaned off of all drugs and especially all diabetes drugs. Beans will spike your blood sugar, I maintain normal blood sugars so it’s not horrible if I spike. However, if you are already ‘high’ and spike… it can be dangerous.
4) Lastly… I’ve eaten low carb, primal / paleo meal plan for 4 1/2 years. I love the way I eat, I love the way I feel … I love the way I LIVE! And I will never go back to the high carb, grain based meal plan of the past… NEVER!
Experiment Set Up
I ate a cup of beans this morning and as instructed by Richard Nikoley via FreeTheAnimal.com.
Why? I want to test my reaction to the pinto beans after eating potato starch since 11/22/13. I have other reasons too which I will get to later in the post.
I …
1) Soaked the beans for 48 hours, changing out the water after 24 hours. Soaking helps to break down the toxins in the beans.
2) I cooked the beans for an hour plus with a few pieces of bacon.
3) I did not eat any potato starch before or during the bean consumption.
Background
For a month (ending a few days ago) my last experiment was eating only fatty meats and leafy green vegetables for 30 days, you can read about it here. I had done this before (read about previous experiment).
For 30 days I averaged 5 grams of carbohydrates, about 1% of my calories came from carbs. 80% from fat and 19% from protein.
That means that I am VERY fat adapted. My body’s burning fat for fuel… either my own (I lost 7 lbs) or fats consumed.
Being fat adapted, any carbs consumed will raise my blood sugar more so than if I was ‘carb’ adapted.
Therefore, the numbers below will be inflated due to this.
The Blood Sugar Tests
My blood sugar before eating the beans (88) was slightly higher than normal, I’m guessing it was due to the intense exercise I’d done about an hour earlier. Then … I ate the BEANS!!!
30 mins after eating my blood sugar was 91 mg/dl … I was STOKED!!! Only a 3 point rise! FYI, starch usually hits me quick! Even with fat with the starch I get a quick rise… remember, I did add bacon.
My next reading was an hour after eating the beans… 93!!! Wow… I was REALLY excited at this point. Only a 5 point rise an hour after eating BEANS!!!
When fat is consumed with or near the eating of carbs… fat will delay the processing of carbohydrates.
I didn’t eat any obvious fat… what I ate must have been absorbed by the beans or on the beans. I eat a lot of high fat meals and I would definitely not call this meal ‘high fat’ …but I could be wrong.
My blood sugar reading at the 100 minute mark… definitely told me I was wrong. 142!!! I was disappointed no doubt about it. I was really expecting a 100+/- number… I was obviously wrong.
Next came the two hour reading, typically if I do a test and I eat just sugar or just starch, I’m close to or sub 100 mg/dl by the two hour mark… unless I eat a lot of fat.
This reading at (2) hours once again hints that there was more fat than I had guessed. 118 mg/dl.
I measured one more time… at the 2 1/2 mark just to make sure my blood sugar was heading into the safe ‘normal’ zone. FINALLY .. I was back in ‘normal ranges’!!! 85 mg/dl.

Take Home Message
These numbers were NOT horrible, especially given the fact that I was very fat adapted. This is Phase One of this experiment. After I’m Carb Adapted, I’ll retest the beans and other highER carb foods.
I am going to continue to eat the beans. My plan is to eat two cups per day. In the morning plain and in the evening for dinner with meat and fat.
This experiment is ‘killing two birds with one stone’. Not only will I be testing beans …. but I will also be ‘re-adapting’ my body to burning glucose / carbohydrates for fuel.
I’ve done this before, in fact the last time was after doing a similar ‘fatty meats and veggie’ experiment.
In this post, “Dear Pancreas You Can Rest Now” I have proven that my ‘glucose processing’ improves after eating high carb (150g) for several days. This time, I plan on eating 70-100g of carbs per day for a week or more. I’ll be testing not only beans but rice, white and sweet potatoes and fruits.
Knowledge is power and that is why I am doing this.
I want to increase my knowledge … hoping that it will benefit others and myself.

I was going to weave a masterful post … using all of my limited writing ability to craft a masterpiece that will convince ALL ‘fence sitters’ to join me in …. primal living.

For those that do not know, I was taken to the hospital via ambulance on February 15, 2009 after being chronically sick for months. I went to the urgent care facility … and they whisked me away to the hospital.
I was told my pancreas had shutdown and that I was likely a Type 1 Diabetic and would be on diabetes drugs and insulin… for the rest of my life.
Had I listened and followed the ADA way of ‘carb up and shoot up’ diabetes treatment plan… there is no doubt that I would STILL be drug and insulin dependent.
Note: When I weaned off drugs and insulin a little over a month later… I was told that I was in a ‘honeymoon’ period that could last weeks or months… and that I should “enjoy it while it lasts”.
THIS has been ONE HELL-U-VA Honeymoon!! Woot!
Luckily I did not listen to those that profit from the pain and suffering of diabetics …
I did my own research and through self discovery realized that I found a better way.
If you are not eating a ‘low carb paleo’ meal plan… I urge you to do so.
After 5 years… I love how I eat, I love how I play… I LOVE HOW I LIVE!!!

Poblano Peppers, Tomatoes & Potato Starch
This is a previous ‘creation’ using chuck roast and Sriracha/Hot Sauce blend.
My first food post in a LONG time. Why? My foods are so simple now, for the most part.
I typically cook meat with a handful of veggies.
However, I recently tried something different and I wanted to share because I think it can make a difference for some of you.
YOU will never need to buy a taco shell again… never!
Want something crunchy? BAM! Try a Poblano Pepper. It tastes very similar to a Green Pepper but with a ‘bite’. It’s not hot… but it is lukewarm, depending on your tastes.
And… you can really ‘load it up’ with contents.
How to Use Pablanos
I’ve used avocado and zucchini to hold food in the past… I did it by simply slicing them in half and removing the unwanted material. You can see previous food posts, “Stuffed Avocado“, “Stuffed Guacamole Supreme!” and “Zucchini Boats w/Chile“.
Slicing the Pablano in half did not work for me, there is not enough room to add a lot of meat. I do think halving would work if you are preparing appetizers … say with bacon and cheese!
I discovered these a few weeks ago and after experimenting (and stealing Karen Gales idea) I learned to just slice a little from top to bottom. This creates a nice pocket for all sorts of meats, cheeses and other plants.
In the picture you can see how I cut a strip down one side of the pepper. I use the firm cheese pieces to force and hold open the pepper. You can cram more into them this way.
Pro Tip: Too when you add the hot meat, it melts and creates… heaven!
Ingredients (per person) Total Carbs = 22 grams
1 Chicken Breast (0) carbs 1 Pablano pepper (4) carbs 2 Roma tomatoes (18) carbs 2 oz of cheese ( I used Monterrey Jack) (0) Carbs Salt, Pepper to taste
Optional: Garlic, Onions and Oregano! (next time)
Steps
First – greased the skillet with butter, cut up the chicken into bite sized pieces and began cooking.
Second – I cut up the veggies as noted above. I also cut up a single small tomato and sprinkled it with a (1) Tablespoon of Potato Starch, Salt and Pepper. I know that may look like powered sugar… I assure it is NOT!
Third – I am using a raw Pablano, if you would like to roast yours (and I do like it like that way as well) then now is the time to place in the over to roast or broil.
Fourth – When the chicken is ‘done’… add the tomato and pepper (and any other vegetables). I don’t cook my vegetables as much as I am warming and coating them with the fat that I’m cooking with. I like my vegetables crunchy.
Here is a picture of the chicken and vegetables cooked together.
Next – Load up the pepper!! or ‘stuff’ it if you prefer!
Pro Tip: I left the stem on the pepper. That aids in controlling your meal.
Lastly: Add cheese and microwave for a few seconds until the cheese melts.
Blood Sugar Readings
Almost forgot!! After consuming 22g of carbohydrates here are my blood sugar readings.
1 hr = 126 mg/dl
2 hr = 112 mg/dl
3 hr = 89 mg/dl
Take Home Message
4 1/2 years ago I started my low carb and ‘fully primal’ journey.
I love the way I eat and I love the way I FEEL!!! ….and I am NEVER GOING BACK to the way I once ate and lived.
I love to explore nature and…. new foods as well. I wandered into a Hispanic grocery store a few weeks ago, only a couple of blocks from where I live. I discovered Chorizo for the first time (no junk added, just spices) and Pablano Peppers!!
Embrace exploration!!! … of foods, places and people.
And do not forget, QUESTION EVERYTHING!
I did… and it has changed my life positively… for good.
