Lanxi Restaurant is located near the west entrance of Guijie Street, which is inundated with hot and spicy crayfish during this season of a year. Lanxi only uses deepwater crayfish while the majority freshwater ones like those transported from Xuyi, Jiangsu Province.
Deepwater crayfish is also called Irish crayfish, which looks a little bit like mantis shrimp growing two pincers. Inhabiting in the ocean 150-600 meters deep, the Irish crayfish looks lighter in color, but equally in size with its freshwater counterpart. The cooking methods are exactly the same, but the processed Irish crayfish taste more delicious with a combined flavor of freshness and sweetness.
