this is basically a food blog since i’ve migrated my main activity to @vatama lol
gorgeously fresh tataki and a salmon poke bowl with @jncos today!
@scaryhandjob and i also went for some PD and they were serving various insects! sugar and cinnamon crickets, chilli and garlic crickets, mealworms, and dehydrated ants (in approximate order of deliciousness, from best to least best).
a great communal dinner for my best bud @jncos‘ birthday! real amazin stuff like: cotton candy cocktails; pear, rosemary, ginger beer punch; pulled brisket; creamed corn; pork belly lollipops; chilli and cheese sausage; pickled slaw; jalapeno poppers; cornbread; key lime pie; banana cream pie with cognac. I’m missing out a lot of the stuff we had - what’s posted is only about 1/2 or 1/3 of what we had for the whole table! good effort gang @i-am-not-adorable @sabreprincess @galactides

!!!! I went to Paste for lunch today. Gorgeous, creative food based on recipes served at the royal court from the 1800s and 1900s. I might have enjoyed it more than Nahm tbh!
So! We had:
Bale fruit, pandan leaf and elderflower soda. Those colours. Gosh!
Abalone toast. I just. This was so good. This was so. Good!!!!!!! I’m not usually into abalone but this worked. If you guys have ever had Thai prawn toast, it was basically that but 100x more satisfying.
Watermelon, ground salmon with crispy shallots and roasted galangal powder. My mother makes a version of this using tiny sugared fish that you eat with watermelon. It’s a dish that has the perfect balance of salty and sweet, with complementary textures. Big fan!
Steamed silken tofu, mint, coriander and crispy shallots with chilli, soy and ginger dressing. Love that creaaaamy tofu, and the accompaniments made it a refreshing dish!
Chanthaburi province noodles with gulf of Thailand blue sea crab, curry paste, fresh coconut milk and dried scallop floss. Beautifully savoury. They used sugar banana flowers in this as well - apparently you can only use the flowers from sugar bananas because they’re the only ones with the right flavour!
Smoky southern yellow curry with gulf of Thailand red spanner crab, hummingbird flowers, Thai samphire and turmeric. This was intense and rich and DAMN!!
Crispy skin free range sous-vide duck rubbed with northern Thai ‘makhwaen’ pepper, drizzled with fresh som-jid (citrus like orange) and star anise sauce. HOLY SHIT. That citrus sauce. Perfection.
Lemongrass and white turmeric panna cotta with som saa (bitter orange) and Chiang Mai strawberry ice cream, and fresh mango, berries and dragonfruit. Yes. YES?!
Chocolate rum truffles with passionfruit flowers! So rich. So dreamy.
Nan province pumpkin and wild honey pudding with young coconut sorbet, passionfruit cookie crumble, roasted pear and passion fruit foam. That pumpkin pudding hoooooly
;-; This restaurant was so utterly lovely in every way. Really glad I was lucky enough to be able to come here!
Wow okay! So I went to the restaurant Nahm for lunch, and I can see why they were voted 28th best restaurant in the world. The balances of flavours and textures were extremely precise, and every mouthful kind of had me going ‘whoa’ because you could both taste each ingredient’s own flavour and the whole composition at the same time.
Pictured:
- Ma hor, or galloping horse canapes. Pineapple with a caramelised mixture of pork, peanuts etc in a mixture of palm sugar, fish sauce, so on. Really nailed that Thai balance of sweet and salty.
- Egg nets with prawns, wild almonds and makrut lime. That cronch. Yes.
- Pork and lobster with shredded ginger and Thai citron. A ‘mieng kham’ style food. Jesus that lobster was juicy. Bursts in ya mouth.
- Clear soup with roast pigeon, crab and tapioca. Extremely rich for a clear soup! I was surprised by how much flavour was in the stock, and the tapioca pearls were a wonderful addition.
- Thai vegetable and fruit salad with tamarind, palm sugar and sesame dressing. This...was amazing. The sauce was creamy in the mouth, and the salad included starfruit and rose apple, and possibly cape gooseberry. Incredibly refreshing!
- Steamed coral trout with bang rak yellow beans and pickled garlic. So soft. So tender. Cooked with bacon beneath to impart flavour to the fish, as it should be.
- Massaman oxtail curry with fresh nutmeg, ginger and eggplants. I. Wow. Okay. Massaman curry is something that’s apparently really hard to get right, and after tasting this today I think I might not have ever had it right. It was different to every other massaman curry I’ve ever had, and I couldn’t figure out why - and then my mother pointed out that it was the fresh nutmeg. Probably roasted whole. The difference it made was immense and completely changed the flavour profile of the curry. Gosh.
- BIGGEST FUCKING LYCHEES I’VE SEEN IN MY DAMN LIFE with deep fried shallots and young ginger in a bitter orange/som saa ice. Incredibly refreshing after the other courses, and the crunch of the fried shallots was heaven combined with the softer texture of the lychees.
- Thai wafer with poached persimmon, young coconut, meringue, golden duck egg noodles, sesame seeds. What a fuckin’ delight. WHAT A FUCKIN’ DELIGHT!!! I have been thinking about this damn dessert ever since lunch because the flavours and the textures just WOW!!
- Thong ek with nuts inside, topped by gold foil. This is a sort of dumpling made using egg yolks, and it’s incredibly rich. Like a lot of other Thai egg-yolk based desserts, it probably came from Maria Guyomar de Pinha, a Japanese-Portuguese woman who introduced Portuguese sweets into the royal court of Ayutthaya during the time she was enslaved in the royal kitchens. Lot of interesting history behind it! Also it tasted great so there’s that lol.
Not pictured:
- Menthe 2, a drink using fresh mint, mint tea, lime juice and soda. Yes. YES???!!
- Tea punch, a drink using orange juice and lemon juice, earl grey tea, and sprite. Tea punch needs to be more of a thing. Let’s make it happen, people.
- Silvermoon sencha - what a gorgeous tea! Light and soothing, has the aroma of strawberries and vanilla. Tempted to buy some. iT’S FORTY BUCKS FOR 100 GRAMS lol.
- Kingfish salad with pomelo, lemongrass and lime. Really enjoyed the texture of the fish here, and god, the pomelo - it was just incredibly juicy.
- Hot and sour soup with river prawn and wild mushrooms. The mushrooms were termite mushrooms, which are pretty tough to find because they only grow in a symbiotic relationship with termites? Either way the texture of those mushrooms was pretty wild! ...Which makes sense because they were mild mushrooms!!!
So that was Nahm! Whoohoo!
Some things I’ve been up to lately! Went to Kanchanaburi province to muck about in the forests and visit various waterfalls, buy copious amounts of mangosteen (I’m talking over 20 kilograms lmfao) and pomelo, visit some wats, and see animals. Macaques going biting people, good fun hahaha. We also huddled onto a creaky motorboat in the rain and visited an underwater temple, which was pretty cool.
Been eating lots of my favourites too. Here we have mieng dok bua, or lotus mieng using the lotuses from our garden here in Bangkok; hoi laai; fried frog; lotus stems. Good stuff!

So up first is the Virgin Q-Zu - cucumber syrup, fresh cucumber, yuzu juice and lemonade.
I had the classic bento: sashimi salad with matsuhisa dressing (that salmon was melt in your mouth perfect), sushi, prawn tempura with a creamy spicy sauce, sauteed vegetables in spicy garlic sauce with rice, and beef tenderloin teriyaki.
IIRC, @colferarchy had the special bento available with a tuna sashimi salad, sushi, pickled capsicum rice, wagyu curry, king crab tempura. That crab tempura. Hot diggity dog.
Then dessert:
Orange Island, which is a blood orange ‘lake’, orange almond cake, white chocolate orange parfait, nashi pear in pisco syrup, and mascarpone cream. More desserts really need to use mascarpone tbh.
And then the lava cake, with white chocolate and green tea fondant, cherry coulis, and yuzu ice cream. I could’ve eaten a bucket of that yuzu ice cream by itself, it was so good.
Always thankful to @sabreprincess for introducing me to this bakery. Cotton tarts, matcha almond croissants, cherry danishes. Also truffle and sea salt breadsticks, but I ate them already lmao.
