Dumb question: I wanna mod the old Holy Grail, so it runs on standart boss power supplies. Can I just de-solder the original adapter and put a "normal" one in it? If so, why didn't they do it in the first place?

Yes just watch the polarity and, that’s just EHX’s style I guess. Drilling those enclosures is kind of a pain in the ass too, but doable.
