Good morning! Last day in this cold weather before heading to Costa Rica in the morning 🌴☀️ - m y b r e a k f a s t ✨ pumpernickel toast with smashed avocado and an egg fried in @fourthandheart ghee, and a small smoothie with cauliflower, blueberries, banana (all frozen), a scoop of organic chunky peanut butter, homemade almond milk, @sportsresearch MCT oil, and cinnamon.

Pumpernickel 👏 bread 👏 is 👏 everything. Did I do that right? ✌️slices fresh pumpernickel toast, one topped with 1/2 an avo, an egg fried in @fourthandheart ghee, and microgreens, the other topped with @wild_friends honey sunflower butter, sour cherry jam, and chia seeds.

Bowl of goodies 😍 ground turkey sautéed in ghee with scallion, coconut aminos, garlic, & ginger, cauli rice crisped up in ghee, roasted Korean yams, arugula in a little olive oil and lemon, and a ripe af avocado sittin’ on top. 🥑🍋

Something to look forward to! I try and pack my lunches every day mainly to save money but also to eat delicious food because I usually like my own home cooking better than mediocre restaurant food 🤷‍♀️today is roasted lemon thyme chicken breast on top of zucchini noodles sautéed with garlic, olive oil, and cherry tomatoes. Also bringing @hamama_greens microgreens to throw on top 🌱

It may be in the single digits outside but it’s nice and toasty in here 😊 time for a smoothie bowl! I like smoothie bowls better than smoothies for two reasons 1) eating with a spoon is more fun than drinking through a straw, 2) TOPPINGS 😍 in this bowl: 1/2 sweet potato (steamed then frozen), frozen cauliflower, frozen peas, a few pieces frozen mango, 1 banana, a spoonful of chunky organic peanut butter, 1tsp @sportsresearch MCT oil, loads of cinnamon, and homemade almond milk. Topped with the best: @purely_elizabeth pumpkin spice granola. Paired, obviously, with a hot cup of black @uniquecoffeeroasters coffee.

Happy Saturday 🙌 today I asked myself, hm what would be good in a frittata? Then I remembered I had leftover pernil bathing in mojo in the fridge and I cried...tears of joy. I sautéed red onion in ghee, added the pernil and heated it through, then added 4 scrambled eggs to the pan and let it cook around the sides. Sprinkled the top with a lil parmesan and chives and popped it into a 400 degree oven for 15 minutes. Topped with avocado and microgreens, and paired with a honey crisp apple drizzled with honey sunflower butter & hot, black coffee. 🍳🥑☕️🍎🌱 (at Staten Island Urby)

Wrapped up half a Cuban sandwich from last night in my @lunchskins and made a quick spinach salad with cherry tomatoes, red onion, sliced almonds, and a homemade balsamic vinaigrette in my @bentgolunch salad bowl 🤤🥖🥗
