I am a spoonie that suffers from Mixed connective tissue disease, hashimoto's thyroiditis, cardiomyopathy, left ventricular hypertrophy, chronic fatigue, a few other things that were caused by MCTD. It's extremely hard for people like me to push through a regular day but as a budding entrepreneur it's indescribable. I try to focus more on the things that I can do instead of the things that I can't do or I will sink back into depression and that's not something that I want or need. So I did a thing. I don't know about any other cake bakers but in my experience gluten-free cakes tend to easily under baked directly in the center. I used to tent my cakes with foil so the outside didn't burn or become too brown while fully baking the center. Well I ran into someone on IG that fully covers his cakes with foil to which I did and was completely satisfied with the results. However, I decided to try baking in a plastic turkey bag to see what would happen. WELP! It's great in my book. Yes I have a high dome but I don't care about it because that dome can be cake pops. Later I'll figure out how to eliminate the dome but for now I am really excited and pleased with the results. I remember when I simply had an idea....I have turned that idea into a product...and actual product! I'm small and the baby steps start and stop so much that it doesn't become frustrating. But when I pause and turn around I am able to appreciate every step and the pauses in between.
